My husband, Bill, is my BIGGEST food critic but all of our friends at Tybee have a loud voice as well! Because of the many requests for my recipes, I published my collection and it became available at the end of May. Some of you have already purchased it and I thank you. This makes a great book for your home as well as a wonderful gift for any occasion.
A sample recipe - - - - - -
MEATLOAF (Page 68)
1 pound ground chuck or round
1 egg beaten
3 slices bread torn into small pieces
2 teaspoons mustard
6 tablespoons ketchup
2 teaspoons Worcestershire sauce
1 large onion, chopped
½ cup milk
Salt and Pepper
Soak bread in milk. Combine milk mixture, egg, Worcestershire sauce, ketchup, and mustard. Add as much salt and pepper as desired. Cook onion in microwave about 4 minutes. Combine onion with milk mixture. Add meat BUT DO NOT OVERMIX as it will be too compact! Spoon into Pyrex dish and top with as much ketchup as desired. Cook 1 hour in preheated 350 oven.
